The cultivation of grapes in Australia has changed dramatically over the last few years; 90 % of vines are now used to produce wine. In contrast to the labour-intensive manual harvest and processing of sultanas, wine can largely be produced mechanically, and the material price is relatively stable in the wine industry. Australian sultanas from Märsch are light in colour, which is down to the sun in Australia during the drying phase.
